What I normally do are one of two things.
1: I am the primary CC and do ALL of the mezzing (I prefer this in Seb or any fairly short range pulling camps) and tell the chanter to just keep a hasted pet.
2: I do NO mezzing at all, and I will snare the mob which keeps it from training people, keeps it off the chanter if the mob resists mez, and also slows the mobs attack speed so it is pretty useful. Then the mez lands, and I run off to pull more. If there is a crazy monk pulling instead and they like to bring 2-4 mobs, I use AE snare on them and kite for a few seconds until the chanter has them locked down.
Doing either all the mezzing or none keeps you from messing up the chanter and works very well.
