not 100% sure on the toon thing, but my assumption would be that it came from cartoon, as back then most mmo graphics could be considered 'cartoony'.
mob is easy, that was a term from the MUD days that was short for mobile object, or often just mobile. If you've ever played any MUD, you know that every. single. thing. that you can kill is a mob. | ||

oh and twink most definitely came from its other definition, gay. There was a TON of resentment towards twinks in early eq, even into luclin and possibly beyond (i quit during luclin), and the word twink was used as a way to vent that resentment.
