i guess you could call it that, i had just taken my jacket off coz the sun came out and they decided to snap a picture just then .. it was cold enough to warrant it, i don't wear scarves in the sun usually

#2 Pancakes: seasoned cast iron, use bacon grease to lubricate, use buttermilk

#3 red potatoes are gross honestly, but I like them with corned beef & cabbage when they get all overdone and watery with the brine.. But are you talking about home fries or a mash? For home fries, I never add bacon bits, I just eat bacon on the side. When I make home fries, the most important part is to properly caramelize the onions. This process requires a properly seasoned cast iron pas and should take no less than 45 minutes, and you have to stand there and stir almost the entire time. If you don't, they are grilled onions or burnt, and it ruins the effect. Once you have the onions properly caramelized, set aside the onion pan and start on the potatoes (which you have been dicing into 1/3" - 1/2" cubes, and setting aside in a bowl of water with a bit of lemon juice. Make sure the potato pan (also properly seasoned cast iron) has been preheating for a while. You want the temperature set at medium/low and nice and stable. Add bacon grease, let it come to temperature, and then add the potatoes. What you WANT is evenly golden brown crust on each of six sides of every potato. This is best accomplished by turning each individual cube five times. Trust me, it seems like a lot of extra effort, but it actually takes less time than you think, and the results are amazing. After the potatoes are properly crusted, turn the heat to the lowest setting, and add the caramelized onions, spices, and your choice of 1-3tsp to taste dry cheese (like parmesan). I recommend Prudhomes MAGIC salt free blend for ease, adding my own salt to taste. Toss the onions, spices, and cheese together with the potatoes until mixed well, and then turn the heat up to the maximum level. You want to cook like this on one side only until the VERY first scent or visual sign of burn arrives, and then immediately plate the potatoes to prevent more burning. Serve with bacon.
