The first couple seasons of Bleach were great, but latter ones have too many pointless and repetitive fights. Naruto is the same way, but I loved the first few arcs of that show. Both of the Fullmetal Alchemist series are shorter and good all the way through.

I like:
Fairy Tail for magical fighting similar to Naruto (Naruto fights seem to take twice as long though, Fairy Tail fights seem appropriately lengthed, at least to me). It has large and small story arcs as well. My favorite is the Phantom guild story arc. First season is on Netflix.
Kenichi for marshal arts fighting with comedy. I was surprised how much this grew on me. I have no idea how accurate the training is, but it all made a lot of sense. Entire thing is on Netflix.
Legend of Legendary heroes was a surprisingly good anime as well, despite the horrible name. It was also on Netflix.

YuYu Hakusho is a really good anime along a similar vein to Bleach. It's a bit old, but really a lot of fun to watch IMO.

Really enjoyed Ruruoni Kenshin when I caught it all those years ago. I think the japanese seasons that didn't get dubbed were known as samurai X or something?
I had bought the samurai X dvd set thinking it was going to be kenshin, think there were 6 episodes, the first 4 took place before the tv series and the last 2 took place after the series.
Not seeing the entire series didn't affect watching Sam x really, thought it was amazing.
FMA is good, some solid fighting ill never watch the original again after watching brotherhood though.
I'm still a sucker for cowboy bebop and trigon, not the most action packed but some pretty good scenes.

Currently airing: Mahouka Koukou no Rettousei
From this year: Kill la kill (same director as Gurren Lagunn)
Last year: Kanata no kyoukai.
The purest "fighting" anime (vintage): Hajime no Ippo, or Ashita no Joe
I recommend all of these so hard. I like juxtaposition of feels with my violence.

I was about to suggest it before I saw your post! I still remember when a friend of mine went on vacation to China (12 years ago!) and brought back some bootlegs of YuYu Hakusho with Chinese/English subs.
Ranma 1/2 is another old but decent anime, if you're interested in non-series Animes too, try Fatal Fury, Tekken and the Street Fighter movies too.

Ranma 1/2 is another old but decent anime, if you're interested in non-series Animes too, try Fatal Fury, Tekken and the Street Fighter movies too.
loved street fighter as a kid the fight between chunli and vega, I gotta look that up now

Berserk isn't really a traditional fighter type of anime, but as far as a medieval type, it's one of the best I've ever seen - and I've seen many! It's unfortunate they discontinued the anime after 25 eps, but the manga is still ongoing.
Guts (ガッツ Gattsu?), accompanied by his elf companion, hunts demon like creatures called Apostles. Apostles are humans who have made a deal with demons known as The God Hand and in exchange for their wish they must sacrifice someone or something close to them.
The story shifts to a backstory. After his troubled childhood under his adopted father, Guts joins a mercenary group under the charismatic leader Griffith. Griffith, Guts and their mercenary group play a pivotal role in ending the long war that has ravaged the country. Griffith however, is captured and horribly tortured for having sex with the King's daughter. With his body horribly mutilated, Griffith's dreams of becoming a king seem to be ended, but Griffith sacrifices his friends and mercenary group to the God Hand to continue his dream.
Bastard is also another great anime which was cut down to 6 episodes, but they're all action packed from beginning to the end.
In Bastard!!, the Kingdom of Metaricana is attacked by the four lords of Havoc. This prompts the high priest to ask his daughter to awaken Dark Schneider, a wizard and former leader of the Riders, from within the body of 14-year old Luche Renren.
Bastard!!'s history is about sorcery, revenge, and other power struggles in a Dungeons & Dragons-like world. It is a dystopian world, where people need magic to survive against wild beasts, and evil monsters. There are four kingdoms, each one the protector of one of the four seals that keep the Goddess of Destruction in stasis.
While the first half of the manga follows most a theme similar to Dungeons & Dragons scenarios, it later also focuses on aspects such as beliefs, morals and religions.
They've actually created a remake of Berserk over the past couple of years, although I still favor the original with Jap audio + eng subs, I personally can't stand english dubs cause they always sound so out of place. This remake isn't bad though, especially if you've already seen the original.
In September 2010, a wraparound jacket band on volume 35 of the Berserk manga announced a new anime project,[2] which was later revealed to be a series of films intended to adapt the entire manga series.[3] The first two films, Berserk Golden Age Arc I: The Egg of the King and Berserk Golden Age Arc II: The Battle for Doldrey, were released in Japan in February and June 2012. Berserk: Golden Age Arc III: The Advent was released on February 1, 2013 in Japan.
Naruto is a great anime too, but only if you happen to read the manga, otherwise the fillers can be somewhat lengthy and dull. If you read the manga, then you'll know when to skip the fillers obviously.

O.P. word of advise. Ignore the first page and you'll be well on your way to watching shows that have that little thing known as substance.
Bleach is honestly pretty far down there in terms of quality, character development and storyline, the only shows that are around that bad are the other mainstream shonen garbage that keeps getting shoved down the masses' throats (FMA, Naruto, KLK, etc.)
By fighting I'm assuming you mean martial arts so I'd second the recommendations of YuYuHakusho and Ranma as well as recommend Fist of the North Star, Nina Scroll, and DBZ abridged.
There are a few more really good shows out there as well but that list should keep you busy for a few months.
Lastly, remember Sub > Dub. Every time. No exceptions.

If combining the headache inducing 'oh my god he's using XYZ uncounterable move!' *20 minutes passes* 'omg he's using the one move that counters the uncounterable move!' Crap that Kenshin started and tossing in kids who call themselves ninjas but are louder than infantry fresh out of basic... losing my train of thought just thinking about it.
If that's considered good. What isn't?

The latest fillers are some of the best in the entire series! They basically show in detail; the events that lead up to the Uchiha massacre, and Danzo's involvement in it all. They started with Kakkashi's time in the ANBU, how he met & befriended Tenzo (aka Yamato) and Itachi.
Normally I'd never vouch for fillers, especially in Naruto, but this latest set is something I've always wanted to see. I'm sure most other fans of the series would agree.

Funimation dubs are pretty good actually. Typically those on Netflix give you both Japanese and English dubs and subtitle options, so you can decide for yourself.

Manga is good and I've read a few series, but a good soundtrack gives the story an extra punch. It'll tug at the heartstrings or sense of pride, courage, etc. It definitely rounds out and enhances the story.
Also, while I love Scrapped Princess, I don't really see it as a fighting anime. I see it as a story driven anime with a few good fights, but there aren't enough to keep those looking for good fighting to be satisfied IMO. Log Horizon falls into the same category. I love this anime, but there are so few fights that I didn't list it.

I watched dbza early on. They had a bit of a break between saiyans and namek and i kinda forgot about them for a few years, but "are you a yoshi?" Gets me every time

That's why I kind of listed fighting/magic etc. And while it isn't constant fights, the fights are good and make you go...OH SHIT. IMO
And yes a good OST is great, and granted I started with the Naruto/Bleach/OP until they slowed got boring/I got heavily into Manga and to this day the first Naruto Ending song by Akenobashi(sp) Wind...is amazing.
I liked Log Horizon, but its more political/MMO in Nature. SAO would be a better fighting anime in that regards.
Which now that I think about that, I recommend that highly!

The worst thing about Sword Art Online is that its waaayy too short. They should have continued with the original premise and then made Alfheim online into another season.

That doesn't work, becomes Filler.
The series continues with new games/setting. I believe the next one is gun oriented.(Which airs this year)

The SAO light novels are amaaaaazing, same with Log Horizon. The first season of LH kind of dissapointed me, after all the basass fighting and character development they go back to intrigue and crap. But that's how it worked in the light novels, so can't blame them.

Oh yeah suggestions, in no particular order: Sword art online, log horizon, shakugan no shana, Fairy Tail(this one is pretty damn good, but watch it in a well lit room from a distance, a couple of scenes almost gave me seizures), Fate/zero, Fma brotherhood, Attack on titan(not really fighting though I guess). I'm sure I'm missing some really great ones.

I strongly agree! A good Anime OST will always make the anime more immersive, especially if the style of the soundtrack fits the background environment of the anime itself.
The original Naruto had a great soundtrack, which made it feel like it was part of the Feudal Japan era. After they started the Shippuuden series, the soundtrack for the anime changed completely and felt like it was out of place, like it didn't belong in that era so to speak. It's style got better over time, but it's still not as good as the first few OSTs from the very beginning of the series.

You could do both, I've been doing that with Naruto ever since the original Chuunin Exam arc. Since the manga is always ahead of the anime, you'd always know when there's a filler arc in the anime, and when it's the actual storyline. It felt like spoilers at first when reading the manga, but it was way too tempting not to.
