I searched the forums and all I could find was a post from 2011 saying that the only way to leave a guild was to have an officer remove you with /guildremove. Surely this has been fixed and there's a working command that I can't find anywhere.
Target yourself and use /guildremove.

Easy. You stay in the guild for ages with your cleric, talking about how committed you are.
But once you've been taken through Hate and plate cycle a few times, with people passing loot over to you and get fully geared up, then you quit and go to a guild that raids more.

Plate Cycle is doable with four people who would you need a guild for that?
