So I haven't played EQ in a very long time. What's different in this from EQ release? Are the bosses easier to compensate for less people? Will Beastlords ever be released?

It's different from release because Kunark and Velious have been released. Bosses aren't easier, and no Beastlords ever.

If you want a server with modifications check out some of the others on eq emu. This one is about as close as you can get to live back when velious was released. Also the server is never going past velious so again if that is something you want you'll have to look at one of the other servers.

The community here is pretty cool, although I only hear bad things about the raid scene (not an issue for me since I'm VERY casual lol). Lots of nice folks to group with and drive by buffs a lot :-)
