Ok. I really hate beets but hear they are very good for you. I want to learn to like them and be able to include them in my diet.

I have searched for recipes for beets and all i can find are raw beet salad type recipes (never going to fly.) Or cake recipes or recipes involving lots of vinegar.

Yes. i'm picky. :P

So.... does anyone have a good beet recipe that someone who hates beets would like?

Thanks :)

You'll eat your pickled, vinegary beets and you'll like them!

I've tried this (http://allrecipes.com/recipe/beets/detail.aspx) before, and as a hater of beets myself, I can attest to the mildly tolerable taste. Honestly, humanity has not developed sciences potent enough to mitigate the awful flavor of beets.

If you were actually considering starting with fresh beets . . .Cazic have mercy on your soul.

Buy baby beets, they're the best imo! If you can't find babies get the smallest ones you can since they tend to taste better.

I just roast beets in their skins. Cut off the greens and leave the root intact. Coat them lightly with olive oil, S&P and cook @400F for about 45 minutes to 1 hour. They'll pop right out of their skins when done.

I can eat them just like that ^^ though I usually roast some onions along with them because they're great together. Some people think they need butter. A dash of cloves is classic with beets as well. Or you can get fancy and add a little horseradish and sour cream or creme fraiche.

I did some searching at my favorite food blog other than cremefraiche.org, and came up with some non-salad recipes that don't look disgusting:

here downunder, our canned beetroot is totaaally different to yours. I nearly gagged when I tried canned beets in texas. Just about everyone in australia takes a big slice of canned beetroot on their burgers, along with a tonne of caramelized onions, but it's sweet beet and not your vulgar probably hfcs infused crap, so I don't know if I can really help you!
god, I'm going to miss our beetroot.

Many people do (http://www.southernangel.com/food/pokesala.html).

Even though they shouldn't. (http://www.aces.edu/dept/extcomm/newspaper/june21b02.html)

But it's so delicious. (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=283632) :(

Why are you eating beets out of curiousity? As in, what properties of a beet are you looking for?

I'm sure you could find other veggies with similar vitamins and health content.

There are some that are similar but it's best to eat from a diverse pool of foods .

Beets are nutritionally awesome. Beets are an excellent source of folate. Beets are good sources of potassium and vitamin C. Low in calories and fat free.

They are a nutritionally dense food. I struggle with low iron so I need more vegetables that contain vitamin C to eat with other iron rich foods to help with iron absorption.

I am also trying to teach some small children how to eat from a diverse selection of foods and that there are more vegetables in the world than green beans.

So because i know that...I really want to like beets. I also want to like eggplant. i have a hard time there also. :P

As for eggplant, my wife uses it in cheeseless lasagna (she's lactose-intolerant) and it's tasty but I'm not a big fan of it generally.

Both these can be really good if you ruin the nutrional part of it. Tender cooked beets with butter go over well in my house. And my mom dipped eggplant slices in a saltine cracker & egg breading, then fried them on a skillet. We sprinkled white sugar on them after they were cooked.

you realise that the nutrition contained within actual food is far superior to artificial supplementation right?
