i think the joke was that religion has a huge impact on what day it is, given that religion pretty much created the calendar we use today

If you happen to know when Hanukah is feel free to throw that in on the appropriate days (no matter your religion or the religion of the person you're giving regards to). The exception would be, when the two overlap every few years, you'd wish happy holidays because there are multiple holidays happening at once.
