I camped her straight for 50+ hours. And finally got her! She is on a 48 hour spawn + 10% = 52.8 hours. Trust me - it's true. Best thing you can do is: time it after a patch and wait at her spawn point after 48 hours have past.

PS: Tell other enchanters when you have killed her. Play nice!

This is not the only post indicating her 48 hour respawn timer (with very little or no variance). Adding the 5-day variance is only making the situation worse as fewer people are getting their bottle neck epic piece.
