Monk: Mainhand triggers offhand?
 

Is it true that mainhand triggers offhand and that it's better to have a fast weapon like Jade Mace in Mainhand and something like SoS/AC in offhand?

No, offhand is not triggered by main hand. However, it's good to have a fast weapon in Mainhand because there is a damage bonus which is applied on main hand only.
