Dain is a 7 day respawn, never 3 days.
He can be spawned during the Coldain Prayer Shawl quest...

I think you're confusing duel weilding and non-duel wielding IV. The duel wielding IV being tougher.
Dain 350 means a Dain that is hitting for a max of 350 dmg and Dain 425 being one hitting for a max of 425. I never heard of Dain 425 having fewer hitpoints than the 350, but I guess that could be true... I've fought both a few times and I think 425 is harder even if he has fewer hps... I suppose that could be just a matter of opinion.
