I did notice that in the UI folder of the wrapper mine has "default" and an "old default" folder, which yours did not contain. I tried temporarily moving the "old default" and starting the program but it was the same.

Yo. In the video they clearly show that they are using the same outdated engine that you are using. You are on an older Mac, as am I.
I solved THE EXACT same issue you are having by upgrading the ENGINE, not the WRAPPER, to the most current version.
The dude that made the video above did not have this issue, so good for him. But I did, and you are now, and I posted several times on how I solved the issue.
I imagine since we are on similarly aged systems, this is an issue for us, and not the dude with the tutorial.
Use the wrapper download included at the beginning of this thread, and upgrade the engine as I have suggested. THIS IS A SEPARATE DOWNLOAD AND INSTALLATION PROCESS which I gave links to in a previous post (and you'll have to upgrade the wrapper too if you are starting fresh).
I got all of my tips from the WineSkin forums. They have a compatible gaming database. I cross referenced my errors with their current support forums for games to find glitch parallels.
After you install everything as I've instructed, come back and ask me how to get rid of the d3d lag issues, messed up pointer, how to upgrade the textures and whatever else you need.
