What it boils down to is what you want to do. A paladin would be an offtsnk on most raids. Levelling up you'd most often be the tank. Sometimes you'd pull/cc, sometimes you'd help heal, occasionally you might be dps if they already have a tank and are desperate/just being nice... they aren't very popular though. Most min-maxers will say you need one (at most) per raid. Velious mobs are resistant/immune to stuns. Their dps is horrible. On a raid, it'd be more fun to be a rogue, in my opinion. It's really up to you what you find fun...
