If you replaced the default UI with the velious zip as is mentioned in the Getting Started guide, you probably already have it working. It's pretty close to what EQ looked like when you hit F10 and got rid of the horrbile UI that didn't use most of the screen.
That said, there's a post called Almost Classic UI in this forum with a UI that's about as close as you're going to get to the one you want.
