Seriously though, it depends on the raid.
If they are the only tank or the highest level tank or the best gear tank then they tank.
In Hate for example they would offtank any adds that can't be mezzed (golems, drakes).
In Fear they are sometimes called upon to snare/fear kite mobs that dispell.
They are an additional means of FD pulling (well that maybe not so much after the recent changes).
And when you don't need any of that then basically they grab their highest damage non-procing weapon and pretend to be a 1-handed rogue.

I agree with all of this, except that on live I used to FD pull for groups and a few times raids on my SK despite the FD changes we recently saw being the way it always was on live.
FD memory or whatever it is called is the way FD really was, and you had to FD multiple times even on a successful FD to fully clear aggro sometimes, or else the mobs would run straight for you. Sometimes you had to wait until all but one or two mobs had completely reset back to their spawn point before you could stand up and pull the others.
It made pulling tricky and fun and splitting properly was a challenge, and on many occaisions the puller was either required to camp out or just die and be rezzed rather than train the group, not the rediculous easy mode its been on P99 all this time (ie: successful FD means all aggro is wiped and you can pick whatever you want to pull cause the camp is now spread out). This new FD change is gonna seperate those who would have survived on live from those who suck =P
On the threads note, SK's really don't get to MT much in raids, because warriors are just much better at it (after the 5 minutes they require to get an aggro lead!) OT is the SK way. Just be thankful your not one of the even more raid useless classes haha.
