But how much of each? 15dex/10sta? It seems STA gear is harder to come by, which is why I don't say 20dex/5sta, but maybe I'm wrong.

All dexterity, for any race. Warriors suck enough and kill groups as it is without procing enough. They are the 2nd weakest class behind Druid in my opinion for high-level experiencing and I nearly always groan out loud when some noob invites one to my group.
This is merely my extremely informed and experienced opinion.
