With fungi staff would I only be root rotting and sending pet in? Or could I also slow and face tank?

Yeah root rotting would be the way to go. Normally I would suggest getting JBB for 45-60, but you are an Iksar. You can certainly do some face tanking as well if your pet is getting low on HP. If you have to pick between Epic or Torpor, pick Torpor. It's better to be 60 with Torpor and no Epic instead of 60 with Epic and no Torpor.
