I had been looking into this a little more, as Matt Yaney's post stood out to me as well. It turns out the books did include other pre-existing recipes.

- Ale
- Ol' Tujim's Fierce Brew

These two recipes weren't undiscovered, but they were undocumented in-game until Thadres Thyme's quest was added.
This brewing guide includes both and predates the July 1999 patch.

A few more recipes appear to have been in-game but undiscovered, as with bog juice.

snake scales + flask of water + bottle = bog juice (this can be made easily by someone with no brewing skill btw)

The recepie for wine has been found by the brewer mailing list.

Gypsy Wine: Grapes, Wine yeast, Fire beetle eye, Bottle
Red Wine: Grapes, Wine yeast, Foraged berries, Bottle
White Wine: Grapes, Wine yeast, Foraged fruit, Bottle

I'll keep the stuff I forage if you guys want to try it out, but bare in
mind, my forage is only at 15.

I am up to 135 in brewing, with the ones I have.

Short Beer Short Ale Ale Mead
Fiery Brew Ogre Swill Tumpy Tonic

So, I can make 7 brews, at this time. I've heard of a few others:
Bog Juice (?)
Gypsy Wine
Fish Wine
Red Wine
White Wine
(Something made from Honey Jum)

Oh, and will any of these push brewing skill past 135?

Here is the list of recipes I got from a website I frequent:

Ale = barley + malt + water + a cask.
Bog Juice = snake skin + water flask + bottle.
Gnomish Spirits = Rice, Spider Legs, Rat Ears, Bottle
Fish Wine = Water, Grapes, Fish, Bottle
Gypsy Wine = Grapes + Wine Yeast + Firebeetle Eye + Bottle
Mead = Hops + Malt + Yeasts + a cask.
Ogre Swill = Cask + Froglock meat + Malt + Yeast.
Ol'Tujim's Fierce Brew = Barley + Hops + Yeast + Malt + Cask. Combine
Red Wine = Grapes, Wine yeast, Foraged berries, Bottle
Short Ale = Barley + Hops + Water + a cask.
Short Beer = Barley + hops + malt + a cask.
Tumpy Tonic = 1 Kiola Nut, 1 Flask of water. Combine in brew kettle. No
cask needed!
White Wine = Grapes, Wine yeast, Foraged fruit, Bottle

No.

EQStratics has a great message board devoted to the trade
skills, with a general board and a seperate board for each trade skill
(drop by the fletching board and say "Hi!"). The brewers are always
getting together and comparing notes. So far, Ol' Tujim's Fierce Brew
is the highest skill brew in the game that anybody's found.

They recently found the recipe for 4 other drinks, but these
are all trivial by the time you hit 135 (which is funny since 2 of
them require items foraged by wood elves/druids/rangers).

Interestingly, a few of these comments occur on the same day as Yaney's post. I initially thought there might be another developer "teaser" post floating around somewhere, but I came up empty-handed. Still, if these recipes had been obtained from Garsen's books, as early information from the Test server for example, one would think eager brewers would post all of the included recipes, not just these few.

As for the rest of the recipes listed in the books, I can't be sure. I didn't see mention of them prior to the July patch, but that doesn't mean they weren't craftable in-game. It may be best to unflag them all unless/until more definitive evidence is found.
