You should be able too in the game client.
If not open up your eqclient.ini file and find the [VideoMode] area and edit away.
Mine looks like:

Thanks, trying out those settings but 1920 x 1080.. my monitor won't let me click on the sides if I set the resolution from the game, it kicks me back to windowed mode... lets hope this fixes it!
