Dark Elves, Trolls, and Humans are all base 75 DEX. Gnomes are 85. So we're talking a 5 point split in exchange for 30-40 extra STA and STR.
The big tradeoffs are INT and (lol) CHA.
That and being butt-ugly and getting an extra 20% xp penalty on top of the 40% knight penalty, of course.
