Ok, before I decide to roll an SK on this red server, what are the chances of getting my ass kicked a lot?

SK is a solid choice. Against evenly geared players you should be a monster at the lower levels.

Aside from Harm Touch and the epic, I think SKs are pretty bad overall.

I would pvp as much as you can. You will not find to much of it otherwise.

Any pure melee that has the MR to not get snared is going to own an SK 1v1, unless they get unlucky or suck.
