It's a raiding thing. Raiding guilds don't want other guilds to see that they're massing in a certain zone, because those other guilds might go "hey *insert popular raid target mob here* must be up, let's go see if we can steal it from the first guild". As a result, so they all go on /anon (or usually /roleplay, which is the same thing except you still show your guild tag).
Of course, many raiders leave /anon or /roleplay up even after they're done raiding (and yeah it annoys me too).

Also you might be /anon if you don't want your guild to know you are on when they are trying to raid something and you just don't feel like it atm.
