I have not played for 20 years. Any idea on what class is mostly wanted for groups and raids?

The old trifecta of Tank/Healer/CC have the easiest time, while hybrids tend to spend more time looking for group.

Best advice I can give you is reroll your old characters, try out classes you never played, and just enjoy the game at your own pace with your own goals.
