Sneak/Hide - Get behind mob - drop hide - pickpocket - re-hide . Good to go. You cannot pick while hidden, or the client initiates dropping hide. If you pick while only sneaking, it works.
The sneak/hide failure rates are messed up. They fail too much at higher levels from what I saw, but I dont know what appropriate failure rates are.

Much more important however is the rogue's lost ability to sneak pull. Rogues not being able to sneak pull is most heinous.
