Versatility is your best friend when playing off-hours.

You may want to avoid the entirely group-centric classes (Warrior, Rogue, Cleric, monk to a degree) and play something with a high degree of flexibility. Top choices in my case would be Enchanter, Shaman, Wizard, Mage, or any of the hybrids. Druid also works but the high end can be punishing to find groups, and necromancer is a really hard sell (sadly. I love a good grouping necro).

I rolled up a dark elf enchanter this evening. Died repeatedly to angry bears and wolves in nektulos forest. I played a high level bard back a few years ago on live and enjoyed the group desirability of that, but I thought I might try something slightly different, now that I'm older I don't think I could twist 4 songs without severe RSI.
