After a year and a half, she has a real apprentice pastry chef position FT, paid. Money paid: minimal. *legitimize. You always gotta legitimize, verify, prove out, etc. Why should anyone trust me if I say I can do X? This is how the system works, everywhere, unless you are rich and your daddy says you are smart. But that's not legit, is it?

Pro-tip for youngsters. Offer to work the first week free until your employee is comfortable you can handle the job. That is how I got my first truly sweet job as a short-order cook. I was a 19 and on the road. This was in Berkeley and was the punk hang-out. Only had 5 tables. At the time I was a deadhead leavin' the tour, tired as fuck. "I tell you what, I'll work the first week for free, and I'll pay for the eggs I crack, no problem."
That was a cool job man. 1982 was punk bomb time. Flipper parked their van in the back, and Ted slept in it, and he would come in when I opened the place at 6am, "coffee!!" Another day, another day of speed for Ted.

No one really likes people who whine about shots and how bad the world is. But they like people with sunny dispositions and a game spirit, such as myself. But no, Ted, I am not going to do a line of speed off the butcherblock sandwich station with you. That's your business. But yes, I will take a hit off the bowl. And no, I am not going to quickly heat up a bowl of soup for you. It's 6am. Eggs. Think eggs.
