ES3 Morrowind!
Am sure modders done plenty of graphics updates, but would love some mix of Oblivion+Morrowind, more physics to play with and such.

Final Fantasy V and VII (although there are visual mods for the PC version of the latter), Tactics Ogre, Vandal Hearts, & Shining Force 3!
