Phytates are an easy one, let's start there:

Basically they bind to certain micronutrients, making it impossible for your body to absorb them. I mean you're still getting the micronutrients, just not as much. Add in the fact that your body produces glucose on its own and you're left with absolutely no reason to eat most grains.

Lectins bind themselves to insulin receptors, which causes havoc and takes a person that much further from homeostasis. There's some research expressing a positive correlation between frequent consumption of lectins and obesity, but I can't find it right now.
