Personally, I'm sentimentally attached to Garcia, Hendrix and Vaughn (must be my middle-aged white guys biases showing themselves) but, really, this is a bit like asking which beer is your favorite - the choice of simply one is too much to make!

Lindsey Buckingham. When he left Fleetwood Mac back in the 80's, they had to hire two guitarist to take his place in the band.

His acoustic version of Big Love.
His acoustic version of Go Insane.

He reworked both of them from how they were originally produced.

Haha didn't I turn you on to that Shaere? =)

Prince is probably the most under-rated guitarist that most people have heard of.

No love for Alex Lifeson? Rush isn't known specifically for crazy guitar solos, but that guy puts out so much sound.

Petrucci was a blast to see live as well.

I went to this show a couple years ago and got to see Dweezil Zappa, John Petrucci and Steve Vai just jamming. Jordan Rudes came out with a keyboard guitar and jammed with them too.
