Eating steaks that are cooked properly (well done is a stretch) is a mark of class. Insecure macho bleeding-steak elitism just screams lack of subtlety toward what makes meat taste good.

Certain cuts, especially very fatty very marbled cuts, taste like shit if left raw (rare) because raw fat tastes terrible. Charring the fat while leaving the meat tender and juicy indicates a proper cook, because you've removed the unpleasant texture/taste/consistency of raw fat. This is x1000 more true with hamburger and if you hand me a burger that has rawness beyond a vaguely pink tint I will sock you in the face. Honestly I'm embarrassed and disgusted by people who eat raw hamburger. Tri-tip on the other hand.... lean cut, sear that shit on the outside leave it borderline raw in the middle.
