Spent about 9 hours yesterday putting that damn table together. About 1 1/2 hours of it I needed the headlamp on while everyone else went inside to watch the draft - but GOD DAMN I WANTED TO SMOKE TODAY.

Brisket, it was good but i had to rush cook the last 3 hours since it wasn't going to be ready. It needed 4-5 on 250, and i had to 2-3 on 350.

Sweet. Hope you enjoy it. Check out eggheadforum.com if you haven't already. Tons of good stuff on the forums there. Let me know if you need any measurements/odd pics of accessories, we carry most everything for larges.

It came out much better than the brisket we used to do which was still good. We used to have a kamado that was about he size of a medium BGE, but no plate setter and my room mate who had it had us use briquets... so.. yea... This one had a fantastic tasting crust and was delicious in the middle. Some parts were a bit overcooked which I blame on me having to turn up the heat for the last two hours to burn through the toughness.
