http://journals.cambridge.org/downlo...274c4fdfabca59 The second study I linked did state: "Higher concentrations of this plant lectin, as well as of concanavalin A, competitively displace the binding of insulin to receptors in these tissues." It didn't say this would bring a person further from homeostasis, though I feel when we're talking about a hormone being displaced at the receptor site this is pretty much implied. Some of what I said was extrapolation, but I don't believe it was unfounded. My food is not aesthetic because I honestly have no idea what I'm doing in the kitchen. I started cooking a long time ago out of necessity because otherwise a person eating vegan would pretty much starve, but I never got very good at it. What I buy is a little more expensive than "regular" grocery shopping is, but it's not nearly as bad as it seems. Vegetables are generally very cheap, even at Natural Grocers. The eggs I buy are $4.09 USD for a dozen, and this is very much worth the cost for me because they are my main source of protein. Sometimes I eat 12 in a day just to keep from being protein deficient. If you're buying super cheap eggs this is maybe twice as expensive, but factor in all the meat I don't buy and I think I do alright in the way of protein cost. My butter is $5 per 8oz, but I buy coconut oil in bulk and use that when I can't afford the butter. It's also better for some dishes, like the potato soup I make. Fruit tends to be more expensive than vegetables, though I eat a lot less of them than I do veggies. The vast majority of my diet is veggies, with my calories coming from healthy fat, egg protein and carbohydrates from resistant starches (potatoes- very cheap). Other staples of my diet are like avocado, healthy nuts, olive oil. I'm poor, and I do pretty great with my diet. A person could easily scale back the amount of times they go out to eat to better afford a healthier diet in general. Quality meat is very expensive I realize, but maybe that's a good thing and we should all eat less meat to alleviate the environmental damage and whatever... Those sandwiches looked to be purchased from a restaurant. If you're paying $6 for a single sandwich I don't think you should be allowed to say you can't afford to eat healthfully. Your food sounds delicious, and very healthy! Excepting the tortilla, and likely the mayo and yogurt ofc. You can make your own mayo that doesn't have like soybean oil or whatever nasty things, and the best yogurt is ofc going to be whole organic plain greek. Post some pics of your food! You'll totally upstage me. I need to get to the store for onions today, so I haven't made my soup just yet. Expect some pics like tonight maybe.
