Default pick pocket mechanics

So I've been playing a rogue up to 11 and have raising my pick pocket skill wherever I can (with the exception of in groups, unless granted permission), and was wondering if anyone could give me a summary of the mobs that actually are pickable? It seems most humanoids are pickable but then no undead, but then I can pick willowisps, which makes no sense to me. Also I've read that giants are not pickable on this server?

Pick pockets has been nerfed and nerfed some more. It's not classic but you can barely pick anything anymore.

Get it as high as you can for your epic quest mobs (2 parts) but after that there's really no use for it end game [You must be logged in to view images. Log in or Register.]

Pickpocket is broken. Monster flagged mobs can't be picked and that's what giants are. Very very wrong.
