Aside from the obvious ribeye, I don't think many people are aware of how good beef short ribs can be.

It's literally the best cut you can use for a soup or stew, and the fact that it costs basically pennies only adds to its taste.

Interesting. I should ask my butcher for some of that the next time I go. I usually get chuck roast or chunks of what is advertised as "Beef stew," but those items aren't amazingly cheap even despite the fact that they are less desirable cuts.

A well cooked ribeye is hard to beat. Aside from that, I really enjoy a couple Brazilian cuts. Picanha is similar to a top sirloin, if you get a chance to go to a Fogo de Chao or other Brazilian steakhouse that's the best cut to get.

Another is cupim, I think it comes from a different type of cattle than we have in the US so it's not really available here. I think the cattle has a hump above it's neck and it's cut from there, it's pretty well marbled and fatty, and it's a pretty cheap cut of meat.

So I usually go with skirt steak but I got some flank steak from Trader Joe's the other day, they didn't have skirt steak. Anything I should do differently?
