That's a can of worms that actually gets to some of the most profound questions that underlie our universe. Does randomness exist or is the entire universe deterministic? But the short answer at this point is, because it's all we've ever observed.

So it's like asking, "How do we know gravity is always F = G(m1m2/r^2)".

So your theory is that the idea of Dinosaurs preceded the evidence, and we just backfilled our own idea once we found large bones.

I'm pretty interested in Geology, even though I'm a CS Major I had to take a bunch of other science related courses and I've focused on Geology. What is your theory for large bones that are found?

I believe this too. The universe seems deterministic. This was also Einstein's position: "God does not play dice".

However, best evidence since Einstein's times says randomness, or something that looks like randomness, definitely exists at the quantum level. As well as in nuclear decay.

It seems obvious that anything perceived as random is more often than not a lack of mechanical understanding. I certainly don't know enough about quantum mechanics to say it isn't random but I think you know what I'm saying.
