i think its b/c people some people (like me) only visit the forums while at work doing a job they dislike, so they are in a already somewhat shitty setting and attitude. When they are online, they are at home, probably kicked back, taken care of their "shit" for the day, and its time to game and have fun.
game = time to play and have fun forum = place to bitch about random stuff to pass time or about broke stuff to help get it fixed.

Its also due to the perception that if you can convince many people that your race/class/profession/diety/playstyle sucks, is worthless, and/or isn't powerful enough, the devs of the game will be convinced to boost your power in the game.
On one hand its necessary to have a voice when things really are broken (alchemy in the classic era), but people abuse it 95% of the time, blowing things out of proportion on purpose on the forums. When they're actually playing the game, there's no reason to perform poorly just to prove a point.

On the forums you're discussing theory, hypotheses, you're analyzing stuff. More potential for argument.
In the game you're talking about what you did that day, personal stuff, why the guards haven't re-spawned yet. And you also don't want to appear a whiny douchebag, fucktard or whatever in real-time conversation. Because then it's more evidence that you are actually one of those people.
