Maybe a small pause in between if you do not target yourself then hide is successful

What Tecmos and Nips said regarding checking hide/sneak. Note that you can't activate both and use it like a rogue to move around while hidden/sneaking. However, you can apply both and use them in conjunction while standing still to give yourself periodic invis (when it works) then you can move some more with sneak and then apply hide again.

go halfling and never look back. Probably put all your pts into stamina tho, maybe 5 into str.

Halflings already have the highest starting dex for any warrior.
