Victoria 3 is decent if you like Paradox games. Still a long way to go because it's a typical PDX game that's more bare bones at release, but it's still entertaining.

Divinity 2 as others mentioned is good. Only downside there is that it feels like every 10 minutes you're coming across gear that's better than yours (whether dropped or via merchants) and unless you're playing on low difficulty you really need to keep pace with those upgrades. So it feels like you're constantly spending 10 minutes re-quipping your party like 3 times an hour.

Kenshi is one of the best games ever made if you're into sandboxes

I totally agree with you about Victoria 3 and Divinity 2, both are great games but have their own unique challenges.

If you like really old ... and by that I mean even pre-EQ old ... I'm talking DOS-old games ... and in particular if you liked the 4x-style games like Civilization or Masters of Orion ... check out the recent remake of Master of Magic:

In short, the original game was a bit like Civilization crossed with Magic: the Gathering ... and the remake is 95% the same as the original, just with better graphics and some gameplay improvements.

Kotor's pretty sweet, but I haven't played the reboot. Jedi Knight II was a lot of fun. Placescape: Torment has a good story.
