Yea my metabolism has definitely slowed after 30. Used to be in underweight range though it wasn't just from metabolism.
Activity doesn't have much impact either IMO. The amount of calories you can burn being very active is not that significant, unless you're doing like hours of intensive cardio every day. And generally that isn't good for your body either. I guess what I'm trying to say is that it's better to just eat the foods you crave in moderation than try to avoid them entirely.

Can of tuna w/ olive oil Spaghetti... too much spaghetti 3 cookies plus the one I’m not admitting to. Split a 3oz bag of Cheetos Rockstar Punched. So basically I plan to be 300 lbs by the end of year. 70+250+600?+400+300+260... eh 1880ish cal. That’s not bad.

You never just wake up fat after a few weeks of bad eating.
Just like you can't wake up slim after a few weeks of exercise. Both these states take time. You don't need to rush unless you are motivated to. You can take a break and eat a few cookies a day and gentile exercise etc.. and might not even gain any weight. But, you probably won't lose any either. Motivation goes in cycles. Just be confident the motivation will come back around and try not to be back to square one when it does. This is why everyone that is in great shape is not going ham at the gym all the time, cheats on their diet periodically, and doesn't really know exactly what to tell people that want to look like them... They just kept at a relatively active and healthy lifestyle for like 3-5 years. Some of those days were intense, some where not. You just have to know yourself and how to keep yourself motivated enough not to backslide too hard. Or you can take steroids and work out like a freak for 9 months...crash...rinse and repeat until your body gets too old to handle it. That's what a lot of people in Hollywood seem to do.
