As someone who mained a Human Warrior back on live and was the MT on multiple raids through Luclin, STA is definitely the best way to go. Definitely don't go DEX, it's not worth it at all because it will barely make a difference on your procs.

Now, you could put a little bit into STR if you wanted, to help with the damage that Warriors need to keep aggro, but this is really something that is more beneficial in the old world days on Green than it will be later on. As the expansions come out, it becomes pretty easy to max out your STR with gear, while it's a bit tougher to do so for STA.

I recommend at the very least getting to 100 STA. You could go 20 STA/5 STR if you wanted and be alright.

Warrior has many option for races. One of the top raid guilds I knew back from the 1999 era had a Wood Elf warrior as the main tank and guild leader. He was the best geared warrior on the server practically, and as such one of the best tanks. As long as you can take the lack of infravision on a human, it's not a bad choice (for min/maxing it's also not the best choice, but they do absolutely fine).
Play a human at night and see if it's for you. See if you can swing a greater lightstone to drop in your inventory, and if you make it to 35 before May you can go for a Guise of the Deceiver to look like a Dark Elf (with added bonus of Ultravision).

If warrior is to be your first class, I might advise against it. It can be fun to be a sponge for damage, but otherwise it is also a class that doesn't get truly "fun" until you start working with disciplines and such. Also VERY gear dependent, so work on getting a full suit of banded as soon as you can. Other people may be generous and toss a couple of pieces of bronze your way.

Otherwise just go ahead and make it and see if you like it. You can always reroll if you don't.
