I battered it in parmisian breadcrumbs with oregano, chopped onions, garlic, put it in some oil on medium heat, sprinkled peppper, salt, flipped once brown, sprinkled pepper/garlic, flipped again, high heat, then drained the excess oil off and put them in serving dish, takes about 10 mins total.

Rinsed mine, before battering them, they were packed in a lot of blood.

Most people just batter in flour/pepper, + onion. Thats more southern. Less italian.

that sounds pretty good man. i've been looking for a good recipe like that. I need to eat more livers for the nutrients u know what I mean

yw, the hard part is browning them, not over/undercooking burning them, it took me about 3 times before I kind of perfected it. Worst case you end up with them a little mushy, expect a lot of the breading to come off and stick to the bottom of the pan.

I used a cast iron skillet. Different oil requires a bit diff technique. So far I liked the Conola oil I used best.

But plain lard works real good too.

I usually use olive oil, but thats getting really expensive, and you can really taste the olive oil in everything you cook, but i'ts good as fuck for you.

Oh and I let them simmer a bit in the oil with a lid over the top between flips to keep that heat in on top and cook em more evenly. (but it's not necessary if you flip em more)
