AC + SoS is <1% more dps than SoSx2 between the levels of 43 and 50. As a monk you can 100% get your epic by 50. Just save 5-8K and make a few friends.

With epic, AC in the offhand is always worse than SoS, but only slightly. I like the SoS proc over the stun, but eh.

OP, the high level monks advising you are operating off the errant assumption that dual wield checks are made every mainhand swing rather than every delay cycle of the offhand as it is.

So i should go SoS x2 till i get epic / SoS? Thats the best bet?

get at least 1 SoS. Jade Mace / SoS is not a bad move either at your level, but if you have the money to offer you 2 SoS, then go for it.

Once done, you might want to get an Adam Club regardless of epic or not for when you have to hold agro.
