At present is it only possible to have 1 craft skill up to 250?
IE you cannot have blacksmithing at 250 and raise tailoring above 200

Correct. It was an AA (new tanaan crafting mastery, PoP era) that allowed multiple TS's above 200.

Alchemy aside, low level alts do a great job of filling the blanks if you're so inclined.

Brewing isn't an awful choice. 9th ring requires you or someone else at 248 for the ale. It's dirt cheap but the mino hero brews will make you cry. Actually made pretty good money selling liquidized meat and qeynos tea on live through PoP. We wont see those so brewing really is only good as a major TS for the ale. Necessary as a minor (135+) for tailors.

But for P99, you need an alt for every additional non-class / racial trade. Like my chars are 248 brewing / 250 poison on rogue. 250 tailor on druid. 215+ fletching on ranger. A gnome could 200+ research (or poison), tinkering, and another skill all on the same character. Otherwise it's alchemy, research, or poison making + 1.
