Default The Cooking Thread

As someone who's spent most of their life eating out/delivery, I decided to make cooking something to get into during covid times. I'm no chef, basically I just find recipes online or on youtube and try and to follow them, but it's been a very enjoyable journey. I've learned a lot, and "almost" everything i've made has been leagues better than delivery in both taste and health. It's also become meditative in a way; turning off the work side of my brain and focusing on the creative process. I'm always looking for new recipes and ideas.

So I thought I'd make a thread where we can share recipes, tips, photos, and hopefully inspire people! Positivity!

Tonight I made what's become my go to to sauce with roasted red peppers, onions, jalapenos, and a purple carrot. Very easy to make. Fry the veggies nice and soft with lots of garlic. Then add tomato paste, and heavy cream. Once all the flavors are nice and mixed, throw it in a blender and bam, you've got a bomb ass sauce. The whole process takes about a half hour, a little longer if you roast and skin the red peppers first. Link to a full walkthrough below.

You can add it to all sorts of shit, but this time I chose shrimp with spiralized zucchini, yellow squash, and carrots, cuz i'm trying to be healthy and you can eat a giant pile of it so you fill up. Veggie overload. And all made using one pan. Pro tip - get a spiralizer if you want to add variety to healthy eating.

I love cooking and do it most every night. I usually only follow recipes if I have not made something before, like the first time I mafe Beef Wellington. I can only link a few I have used in the past and now make regularly, with some variations

Also, recipe sites are usually bad so please forgive if these ones suck. Always with the life story and ten billion ads

"Moroccan" carrots:https://www.foodnetwork.com/recipes/...recipe-1946361

Shakshuka: probably trendy and probably an abomination to an actual middle eastern or north african: https://downshiftology.com/recipes/shakshuka/

Vegetarian Mexican lasagna: https://www.recipetineats.com/vegeta...xican-lasagna/

My mother approved of this one, scalloped(?) potatoes: https://www.thespruceeats.com/creamy...-dairy-2122205

This is the recipe I followed for my first attempt at Beef Wellington: https://www.seriouseats.com/the-ulti...lington-recipe

Oh, I kept seeing it come up when I got into cooking, but if you haven't already done so, get a dutch oven. You can make all kinds of wacky stuff in there

I think those ninja things also function as pressure cookers, but I'm cheap and up until fairly recently lived in a small apartment without much counter space

Aside from some presentation that looks as good if not better than some places to eat. The burger looks great!

Edit: dude has the hot sauces too, nice.

I like doing the Oklahoma onion burger. I fuckin love onions, and it’s a fun way to do it. Then I make a sauce of ketchup, mustard, mayo, and diced pickles all mixed together. Made these a few weeks ago.

Nice food!

My favorite food is steak, especially rib eye. The perfect ribeye for me is seasoned with salt and pepper, rested for about an hour. Then pan fried and finished with butter garlic and thyme.

Steak is so easy to cook and make incredible with some practice once your timing and heat is dialed in.

My two favorite methods for steak are the pan fry

and the caveman

My pressure cooker gets a lot of use during the cold months.

Pork and beans is incredibly easy. porkandbeans.jpg
