Because it's SOOOO GOOOOOOOOD! :D
Besides, if we tossed out foods based on mold and/or fungus, we'd also have to toss things like:
Bread (yeast)
Beer (more yeast)
Wine (yet more yeast)
Any booze derived from either of the above (such as whisky and brandy)
Yogurt (not mold, but cultured bacteria - essentially, the same process)
Sauerkraut
Kimchi (where would we be without the kimchi??)
100s of varieties of cheese (not just Blue and Gorganzola)
Anything containing a mushroom
Soy sauce
Miso
Sake!!
Tempeh
And, most of all - Vegimite (http://www.youtube.com/watch?v=DNT7uZf7lew)!!!
Mold rocks! ;)

None of which requires actual mold. Even mushroom spores don't require manure for substrate. If your kimchi has mold in it, it needs to go in the compost! Marmite > Vegimite anyway.

True (about mold), but it's all essentially the same process: start a bacterial conversion (i.e.: spoiling) and then control/arrest the conversion before the "point of no return". Hundreds of cultures, over thousands of years, have discovered this concept - and the result is often damn tasty!

Blue cheese mashed potatoes FTW.
EDIT * It tastes better if the potatoes are smoked before mashing, not boiled.

Ah yea, I forgot I've also done BBQ blue cheese chicken sandwich's and burgers. Usually use sweet baby rays as the sweetness and thickness plays well with the blue cheese. Mix in blue cheese and sweet baby rays until its something like a paste of near equal amounts. When burger or chicken sandwich is almost done paste some of it on top, and add a slice of your choice of cheese (usually something white.. jack/swiss/etc.) on top of the paste to melt over and hold it in there! mmmmmm mmmm bitch

Here's a trick: when preparing your burger (has to be home made burger, not a store bought, pre-formed pattie), form a small hollow in the middle of the ball, put a small glop (about a Tbsp) of blue cheese (or other soft cheese) into the hollow, and then form the full burger around the cheese. Cook as normal, though you'll have to pay a little attention if pressing the burger to make sure you don't press the cheese out.
QUITE delicious!

I do something similar when I make cowboy sliders (shredded cheddar, jalapenos, cilantro, bacon), but I generally don't like anything but lots of garlic stuffed into them otherwise. Dunno, had plenty of blue cheese burgers with blue cheese in them and really just never enjoyed them. I am pretty picky with my burgers though.

Gorgonzola is also disgusting.
Gorgonzola is the classic blue cheese.
Come on guys, blue cheese is the KING of cheese - see, roquefort.
It's produced using only the milk of specially bred sheep and ripened in limestone caverns.
Why don't we talk about how disgusting "American" "Cheese product" is? Everyone loves that stuff. Completely sickening.

Next time do this:
Baguette thinly sliced, brush with olive oil, put in oven on 350.
Cut up sun dried tomatoes, artichoke hearts, and get a creamy cheese (chimay stuff is excellent, I honestly don't know cheese names I just grab some that look good.)
Once slightly toasted pull baguette slices out of oven, place a little of each above item on top. Sprinkle with salt, pepper, and garlic, place back in oven for a couple minutes to warm.

Cave aged gruyere on French onion soup (with vidalia onions!) is alright, maybe some baby swiss on a reuben. Very rarely, some overly spiced or fruity stilton (that way you can't taste the nasty) with a pale ale or wine. But in general, I hates the cheese. The only lactose my digestive system seems to handle is Jersey milk, kefir/yogurt, and food glue ridden pizza cheese. I had gratin dauphinoise with my dinner tonight and I'm ready to eviscerate my stomach just to get it over with.

Wow how can yall hate on Brie?
Step 1: Melt butter in saucepan.
Step 2: Add sliced almonds into saucepan with butter.
Step 3: Add a slight but of salt, and plenty of garlic into saucepan.
Step 4: Microwave Brie until it is melted.
Step 5: Pour saucepan on top of melted brie.
Step 6: Use knife to add brie/almonds to crackers or bread pieces.
Step 7: Wait 45 minutes and go on a fucking run because you just ate a shitload of calories.

It's been my experience that people accustomed to dining on hot pockets and hamburger helper generally dislike cheeses such as bleu.
How many of you in this thread does that hold true for?
