Blue cheese is gross. Why eat mold? Omg ew. Answers please.

Besides, if we tossed out foods based on mold and/or fungus, we'd also have to toss things like:

Bread (yeast)
Beer (more yeast)
Wine (yet more yeast)
Any booze derived from either of the above (such as whisky and brandy)
Yogurt (not mold, but cultured bacteria - essentially, the same process)
Sauerkraut
Kimchi (where would we be without the kimchi??)
100s of varieties of cheese (not just Blue and Gorganzola)
Anything containing a mushroom
Soy sauce
Miso
Sake!!
Tempeh
And, most of all - Vegimite!!!

None of which requires actual mold. Even mushroom spores don't require manure for substrate. If your kimchi has mold in it, it needs to go in the compost! Marmite > Vegimite anyway.

True (about mold), but it's all essentially the same process: start a bacterial conversion (i.e.: spoiling) and then control/arrest the conversion before the "point of no return". Hundreds of cultures, over thousands of years, have discovered this concept - and the result is often damn tasty!

Blue cheese mashed potatoes FTW.

EDIT * It tastes better if the potatoes are smoked before mashing, not boiled.

I enjoy bluecheese on anything chicken related. Especially hot wings.
