Paladin/rogue or sk/rogue could work well too if you both want to stick to melee.

Knight + Rogue is an extremely underrated duo and is itself the keystone of some of the best and easiest group compositions. Druid + Enchanter is also extremely powerful and accessible, as well as Necro + Mage for an extremely fun alternative play style.

Population is only a problem of crowding. On "valley" hours in some of the more popular zones, population never dips below 10 people and true quiet time is to be savored.
