Some changes they had to make just because of how TV production works.
Merging the Sansa/Winterfell story lines for example - otherwise they'd just have to introduce 100 more characters and the girl who plays Sansa would basically be out of the show like Bran. The way they are doing Dorne is a mess though - not that they sent Jamie/Bronn down there, but just how bad the storyline/acting are (Sand Snakes in particular).
