Tradeskills are mostly useless for leveling and getting the best gear, but they do help at lower levels. The demand for tradeskills has actually risen since Velious came out. Here's stuff people want:

Tailoring: silk gear, cured silk gear, arctic wyvern, cobalt drake, black pantherskin, haze pantherskin, handmade backpacks

Blacksmithing: banded, cultural armor, skinning knives

Jewelrycraft: gold, platinum, and velium jewelry

Brewing: a brew for the Coldain ring quest

Pottery: Thurg gate potion

Tinkering: Rebreather, collapsible fishing rod, animated bait (and fireworks!)

Alchemy: SoW pots, shrink pots, etc

Baking: Stat food

And outside of those uses, tradeskills can bring a lot of fun! Brewing and baking in particular are more RP than the others. I've made Eggnog XXX for holidays, and back on live it was far more common to throw in-game birthday parties and hold weddings with birthday cake and wedding cake.
