It's a dynamic form of a gameplay that requires people to be vigilant and react. It creates extra layers to the gameplay, like your group having a lookout, people needing to have better positioning, know where to move, use skills they wouldn't otherwise use, etc. Players factually have to think and interact more when it happens.
It's what NPC's should already be doing on their own anyway, if the AI was better. You just seem to find it more fulfilling to hack down on stupid NPC's that are completely predictable. It's not even realistic to be sitting in a dungeon for hours killing Orcs, and the Orcs down the hall somehow just sitting there and never coming to join the fight. Very low skill, less exciting, less immersive gameplay.
